Jack Daniel has been on the tears for the past few years, which has released some of the best Tennessee whispers, who has well -enhanced more than Old No. 7. But there is another small distillery in the state – Chatanova Wiskey – who is making a name for himself with some classic and experimental release. These include a series of bond vintage release in the bottle, and the latest details were just announced.
Chatchogo whiskey, located in the same name, began to make whiskey a decade ago and launched its bottle in the bond vintage series in 2021. As a reminder, “bottle in the bond” means that whiskey is at least 4 years old, which is produced at 100 proofs, and has been developed in a distillery in an Oson season. Rockogo Whiskey releases its bubbon as vintages, as well as how Nicole Austen does in Dekal, and the latest spring is 2021 old.
Distillery is known to make bourbon, which is called a high malt mesh bill, meaning that there are some different types of malted joe and malted rye with corn contained in the recipe. The release has brought a new mesh bill in the series called Barrel 78, including some roasted grains. According to a press release, the mesh bill was named after the 78th barrel filled with the experimental distalry and includes five grains, including Belgium -made chocolate malted, double -roasted Carimal Malt, and Cherry Wood, who smoked that Cherry Wood.
“Every six months, our team passes through our vast library of mesh bills to see what we want to prepare this season,” said founder Distling Grant McCraicon. “While we like to make our basic recipes such as ‘wheat’ and ‘roasted’, sometimes we will decide to measure a new mesh bill from our experimental distalry.”
The final prescription is 20 % of this new mesh bill, as well as two other – 30 % of their only barrel is the high malt mesh bill, and 50 % of their wheat mesh bill. Whiskey was manufactured in two batchs of 10 barrels, filled between January and June 2021 (a disturbing season). McCricane provided some tasting notes for the new release. “When it comes to taste, barrel 78 is a matter of irregularities,” he said. “Only, the mesh bill contains the chocolate malt notes, and even the sweet smoke indicates. But when it is found in the spring/summer combination, it promotes the taste of the other two mesh bills (especially our wheat synthesis). It is a result of a lot of taste but a lot of taste.
